Mother yeast
All our doughs are processed with our mother yeast.
For over 20 years we have been maintaining it with the care that is dedicated to a child, our mother yeast comes from a town on the slopes of VEsuvius, Italy.

Dough Pizza & Pinsa Romana
The doughs are prepared with mother yeast and using the indirect method which consists in making a pre-dough (biga) left to mature for 24 hours. The final dough is then prepared and left to rise for another 12 hours before the final draft.

Mix with 75% hydration with water from natural sources
The cloud of Arte Bianca is a base ready pizza is hydrated with 75% water coming directly from natural sources.
This allows the product to have a more regular alveolar structure and a short and pleasant chewability.
In addition, the high hydration of the doughs allows the product to increase the life on the counter, maintaining a lively appearance even after several hours from cooking.
